This was the perfect recipe for an easy and hearty soup. We only had chicken broth on hand, and I used frozen broccoli instead of fresh. I loved the chicken flavor and it felt like it needed a little salt and pepper, so I added a bit. We also made a quick salad with vinaigrette dressing I had on hand, and some carrot sticks. This meal was cheap and simple, and the only prep was measuring, cutting and putting ingredients in the crockpot.
I had been wanting to try making soup in the crockpot for a long time, but was determined to act quickly, as I was scheduled for a number of holiday parties with limited time for prep, so I made a potato soup and got canned/jarred chili, and had made those recipes repeatedly in a saucepan. I was thinking of ideas for low-stress crockpot meals to make before, for my busy season, and liked the idea of making a soup to go with the chili. This one was a HUGE hit!
I used chicken broth here because that's what I had on hand. I also added some shredded chicken and garlic powder (however that does not sound it may me, since it tastes complete for 1/4 of the amount I added). It tastes just like regular dumplings with whole wheat flour, but the flax makes it thick, moist, and healthy. I especially enjoyed it the second day, the flavors have grown more complex, and the lecithin makes it easy to digest, although I will make no claims about its medicinal value.
This was very enjoyable. I did follow the recipe and used chicken broth and that is what it tasted like. My only substitute was Trader Joe's organic Roast Chicken (4 chicken breasts, 12 ounces). I also added a little salt and a teaspoon of garlic powder. Next time I make it I know I will add some garlic and use a bigger crockpot as this recipe made just a bit too much for my dishwasher.
What are your thoughts on “do it yourself” vs. cookies from a box? Our wedding cake was a free cake from a bakery while the actual cake was a big DIY creation from scratch, we just didn’t have the time or skills to make the icing. d2c66b5586
